Menu Plans Monday

Good Morning and hope y’all had a wonderful weekend.  We had a very productive and enjoyable weekend.  It was a perfect way to end a jammed-packed and deadline-meeting kind of work week.  Last week became so hectic that I allowed myself to become derailed from my cooking routine.  Along with the derailment of my suppers came a huge lesson learned, my freezer meals are a perfect solution for hectic, no energy to cook kind of days.  So one of my main goals for this week is to get back on track with my freezer cooking.  I need to restock my empty freezer for those pending hectic days that I may be gardening, reading or spending time with my family and friends.  Freezer cooking allows me to make my evening supper routine as easy and breezy as possible, and at the same time delicious, healthy and budget friendly.  So here are my menu plans for this week:

Sunday:  Grilled BBQ split breast chicken, potato salad, baked beans and apple pie.

*Hubby cooked and he had ice cream with his pie 🙂

*this seems to be a theme for our Sunday meal  lol we will have to change it up for next week.

Monday:  Black-eyed peas with kale, rice and corn bread muffins

*didn’t have this last week as planned

Tuesday:  Shrimp fajitas, black beans and rice

* hope to use up some of our fresh and blotting cilantro from our garden

Wednesday:  Red beans, rice and corn bread

*need to look up more bean recipes since I would like to keep 2 days for beans

Thursday:  turkey meatballs and homemade tomato sauce, green salad made from kale and garlic bread

*didn’t have this last week as planned

Friday:  Chicken Broccoli Stir-fry with rice

*trying new recipe for freezer cooking

Saturday: off/open
